Homemade Chicken Salad

I love a good chicken salad! I love to eat it either on bread or with crackers. I love it as a snack or as lunch with a salad (veggie salad) Chicken salad is also a good appetizer to take to work functions or to serve at a holiday party. We served chicken salad as one of the foods at my daughter's 1st birthday party, and everybody loved it. My mother makes a really good chicken salad. Anyhoo, I don't make it all the time, but when I do, I only use a few easy ingredients...

IT'S DAY 5, AND WE'RE SHARING HOLIDAY PARTY FOOD IDEAS!


ingredients: 2 pounds of chicken breasts, 2 eggs, 1 stalk of celery, mayo, & sandwich spread

I boiled the chicken until it was thoroughly cooked. I also boiled two eggs.

I chopped the chicken, celery, and eggs. I only included one of the egg yolks.

I mixed all the chopped ingredients in one of my favorite Rae Dunn bowls. 😁

I added ¼ cup of sandwich spread and ½ cup of mayo. 

I mixed everything really well and put it in the fridge to chill overnight.

The next day, my chicken salad was good and cold and ready to serve. I put it in a cute Christmas tree dish and served it with Melba crackers and grapes. 😊

My daughter said this was the best chicken salad ever! I need some hot cocoa in my Rae Dunn Christmas mugs...

  3. I refuse to cook on Christmas with the exception of throwing our breakfast casserole in the oven. The rest of the day is spent eating snack-y food that requires zero effort on my part. This recipe totally fits the bill! Love it!
